CARAMELIZED RED ONIONS ON BAGUETTE
INGREDIENTS

red onions, peeled, cut in half and thinly sliced |
| 1/4 cup |
olive oil for sauteing

| 1 Tbsp |
balsamic vinegar |
| 2 tsps |
brown sugar |
| 1 tsp |
salt

| 1 |
baguette loaf, sliced in 1/4-inch slices |
| olive oil |
a dab on each slice
|
| 3/4 cup |
gorgonzola or bleu cheese, crumbled |
DIRECTIONS
Saute red onions in hot olive oil over medium-high heat until transparent. Lower to medium heat and add balsamic vinegar, brown sugar, and salt and continue cooking until caramelized.
It takes anywhere from 30 to 45 minutes to caramelize the onions. The natural sugars in the onions caramelize as they cook.
As the onions cook down, you may need to scrape the pan every minute instead of every few minutes; cook until they are richly browned. Yields about 2 cups of caramelized onions.
Drizzle a little olive oil across the baguette slices.
Place caramelized onions on top of sliced baguette, then the gorgonzola or bleu cheese, crumbled.
Place under broiler a few minutes until lightly golden. Watch that they do not burn.
NOTE: You can cook the onions ahead and store them in the refrigerator until ready to use.
