PEANUT BRITTLE
INGREDIENTS
| 2 cups |
sugar |
| 1 cup |
light corn syrup |
| 1/2 cup |
water |
| 2-1/2 cups |
raw peanuts |
| 2 tsps |
baking soda |
| 1/2 cube (4 Tbsps) |
butter or margarine |
Before starting, prepare pan for cooked brittle:
Place heavy foil over large bread board and butter lightly.
DIRECTIONS
In medium saucepan, combine first 3 ingredients. Bring to a boil, and cook 5 minutes on high boil.
Add 2-1/2 cups raw peanuts and cook on medium for 20 to 25 minutes, stirring constantly, to a golden brown (292 degrees). Remove from stove.
Stir in 2 tsps soda and 1/2 cube butter.
Immediately pour onto foil (making 2 passes) spreading as thin as possible. When cool, break in pieces. Keep in tight-lock baggies.
